Recipe for gluten-free energy bars

Keeping your energy levels up during a workout can help maximise your performance. There are plenty of energy bars and drinks on the market but making your own is not only fun and better value, but you can alter the ingredients to your taste. This tasty recipe is also rich in fibre, full of essential fats, rich in polyphenols, gluten free, dairy free, egg free, yeast free and delicious!

Ingredients

  • 400g pitted dates
  • 65g coconut oil
  • 40g cocoa powder
  • 100g ground almonds
  • 50g Higher Nature cold milled flax seeds
  • 150g toasted chopped mixed nuts
  • 25g sunflower seeds
  • 25g pumpkin seeds
  • 2 tbsp desiccated coconut

Method

Line a rectangular baking tray with greaseproof paper.

Add the dates to a food blender and blend until they resemble a soft puree.

Melt the coconut butter gently and blend with the dates, then slowly add in the cocoa powder, flax seeds and ground almonds.

Mix in the remaining nuts and seeds until well combined.

Empty the contents of the blender into the lined baking tray and using clean fingers gently press down until firm. Sprinkle desiccated coconut over the top.

Place in the refrigerator for at least two hours before cutting into bitesize slices. Keep refrigerated for up to a week.
