Tomato, flax seed crumb, walnut & sage pistou recipe

This is a great vegetarian option to help boost your brain health with omega 3 rich foods. Flax seeds and walnuts are excellent sources of alpha linolenic acid, an essential omega 3 fatty acid that is often lacking in our diet.

Method

Pane - put the buckwheat, egg, and flax seed into 3 separate shallow containers.

Start by coating each tomato slice in buckwheat then egg and finish by crumbing with flax seed.

Pistou - put the garlic, walnut butter, basil, sage and walnut oil into blender, whizz to a coarse consistency.

Heat a non stick frying pan with the coconut oil until hot then add six crumbed tomato slices.

Cook each flat side of the tomatoes until golden brown then remove from the pan and place onto absorbent paper.

Serve - arrange 3 tomato slices in the centre of each plate, spoon the pistou around and garnish with rocket.
